We recommend using high-quality ceramic waterstones for the Miyabi Black Sujihiki Slicing Knife 9.5-inch. Due to its remarkable 67 HRC hardness, standard steels or pull-through sharpeners are ineffective. If the edge has become dull start with a stone that has good cutting action like the Masahiro 600 Grit. If you're doing regular maintenance you can start with something more polished like a 1000 or 1500 grit. From there you can jump straight to a polishing stone with a grit 5000 or higher.
