A honing steel and a 4000 grit whetstone serve different purposes. A honing steel primarily realigns a rolled or fatigued edge, helping maintain sharpness between sharpenings without removing significant metal.
A 4000 grit waterstone actually sharpens the knife by removing a small amount of steel to refine and restore the edge geometry. It also polishes the cutting edge, producing a sharper, smoother, and longer-lasting result than honing alone.
A 4000 grit stone is commonly used after coarse sharpening to improve cutting performance on Japanese kitchen knives, high-carbon steel knives, and fine-edge chef knives.
