Maintain the edge with regular honing using the included combination honing steel to help realign the blade between sharpenings and preserve cutting performance. Routine honing helps the knife stay sharper longer and reduces the need for frequent heavy sharpening.
When sharpening is needed, use quality whetstones such as a 1000-grit stone for edge restoration and a 6000-grit stone for refining and polishing the edge. If you'd like to keep the mirror finish you'll need a 3000 or 4000 grit stone in between. To preserve factory cutting performance, sharpen to the original 16-degree edge angle. Professional sharpening is also recommended for users who want to maintain optimal edge geometry and long-term blade life.
