Carbon steel, like that used in the Made In Tom Colicchio Roasting Pan, is very easy to clean—especially when preseasoned. After roasting, if you’ve deglazed the pan to make a jus, much of the cleanup is already done. Simply use hot water and a stiff brush to remove any residual grease or food. Avoid soap on the interior, as it strips away the seasoning layer, but it’s fine to use a bit of soap on the pan’s exterior if drippings have spilled over. Since roasting pans may not be used as frequently as fry pans, I recommend applying Made In seasoning wax before storage; its thicker consistency provides a more lasting protection than an oil between uses.
