Both the Zwilling Pro and Zwilling Professional S collections are made from the same high-quality Friodur® ice-hardened stainless steel, so cutting performance, edge retention, and durability are essentially identical. The real difference lies in the bolster design, and that’s where the Pro series clearly stands out.
The Professional S line features a full bolster, a holdover from older knife-making traditions that adds weight but no real functional value. Full bolsters extend all the way to the heel of the blade, which interferes with sharpening. They must be carefully shaped and can only be properly sharpened by hand on whetstones. If a full-bolster knife is sharpened on a guided system or sharpening machine, it will eventually develop a re-curve near the heel, a problem that can only be fixed by a professional using grinding belts, wheels, or aggressive stones.
By contrast, the Zwilling Pro series uses a modern tapered bolster that delivers a comfortable, natural pinch grip while leaving the heel of the blade fully accessible. Because the bolster does not run down the edge, Pro series knives can be sharpened completely and evenly using any method (manual stones, guided systems, or machines) without long-term issues.
Since both lines use the same steel, the Zwilling Pro collection is the better choice. Its tapered bolster improves comfort, simplifies sharpening, and avoids the maintenance problems caused by full bolsters found on the Professional S line.
