To maintain your hinoki cutting board, start by wetting it before each use to minimize staining. Clean the board with a mild detergent, then towel it dry and allow it to air-dry away from direct sunlight. If a stain appears, rub it with a cut lemon to help diminish and remove it. Remember, both sides of the board are usable. If it begins to curve, simply flip it over and continue using the other side until it re-flattens. Repeat this process as necessary. Importantly, avoid placing your hinoki board in the dishwasher, as this can damage its delicate structure.
