Both Dexter Sani-Safe and Victorinox Fibrox fillet knives are NSF Certified for use in professional environments. Both have good quality, durable steel that can be used and abused without risk of chipping. The Dexsteel used by Dexter Russell is a bit harder than the martinsitic stainless steel used by Victorinox so Dexter fillet knives will stay sharp longer in between honing and sharpenings. The factory edge of a Victorinox fillet knife is better ground than the Dexter Sani-Safe Fillet knives, so the Victorinox will be sharper out of the box (but both can take a razor-sharp edge). We like to sharpen Dexter Sani-Safe Fillet Knives before their first use. The fact that the Dexter Sani-Safe Narrow Fillet knife comes with a sheath is a big bonus for anyone looking to take the knife in the field or on a boat.
