Shun Premier Knives use VGMAX steel, which is Shun's Proprietary version of VG-10. This is harder than the AUS8 steel used by MAC. Shun Premier knives can be honed, but they don't typically need to be honed in between sharpenings to perform at their best. A ceramic rod can be used to maintain VG steel knives and extend the amount of time in between sharpenings. MAC knives can be maintained with a steel hone and respond very well to honing. If you're comfortable with a honing rod your edge may last a similar amount of time with the MAC and the Shun, but novice honing rod users will definitely find the need to sharpen the MAC knives more frequently than Shun Premiers. When it comes time to sharpen both knives are set to an even 50/50 bevel so you can use a guided draw or electric sharpener. Whetstones are our preferred sharpening method for anyone who is willing to learn how to use them. Shun Premier knives will require a stone that is more aggressive than what you would need for the Macs given their hardness. I'd recommend starting with a Masahiro 600 grit from which you could go directly to an RH Preyda 3000 Grit.
