The shape of a knife dictates the way that it moves along the cutting board and how it can be held. It also impacts how much of the blade makes contact with the board at one time. The main variables in terms of shape are handle position, blade width and camber. Handle position changes the way that a knife can be held and how much force it takes to push the blade through food. Blade width impacts cutting motion and knuckle clearance (how much room there is between your knuckles and the cutting board). Camber is the curvature of the blade. Most western style chef's knives have a lot of camber, meaning there is a lot of rock to the blade. This creates a very smooth rocking motion along the board during use and is well suited toward :rocking cuts where you walk the knife down the board. Japanese chef's knives, known as Gyutos, have a flatter blade profile that is better suited for chopping and draw cutting (where you keep the tip on the board and pull the knife back towards you). Victorinox has a range of shapes available. Their Victorinox Fibrox Pro 8 in. Chef Knife is a classic western blade shape with a wide blade that provides excellent knuckle clearance and has a lot of camber. The Victorinox Hardwood 7 in. Granton Edge Santoku is also a tall blade with lots of knuckle clearance, but it has a flat profile that is perfect for precise slicing, dicing and chopping. The Victorinox Fibrox Pro 9 inch French Chef is a great knife for anyone looking for the best of both worlds. The tip of this knife is midline to the blade which is a bit more narrow than is typical for a Victorinox chefs knife. This blade has enough camber to create very smooth rocking cuts, but the camber isn't as steep so this knife can also perform push and draw cuts with ease. This blade makes great contact with the board which is an advantage for anyone looking to maximize their efficiency. With so many different shapes available, you can find a Victorinox Chefs Knife that aligns with your cooking techniques, all of which offer reliability and performance.
