Blade material affects a knife's sharpness, durability and ease of maintenance. High carbon stainless steel is a good choice due to its excellent edge retention and resistance to rust. Stainless steels vary significantly in terms of hardness. Japanese steel knives don't need to be honed or sharpened as often as German, American and Swiss knives but they are much more delicate and can be prone to chipping. Japanese knives are also typically more prone to staining. Softer steeled knives like those made by Victorinox should be maintained with a honing steel or guided honing tool like the F. Dick Rapid Action Steel but are otherwise much easier to maintain. Victorinox blades are made from a proprietary Martensitic Swiss steel known for its easy maintenance and sharpness. This is a very durable steel that will last through many years of heavy use. Victorinox knives are work horses that can tolerate many abuses that less durable knives would not survive. If you're looking for a knife that doesn't need to be babied Victorinox knives are a great choice.
