When selecting a butcher or breaking knife, the blade material is a crucial consideration as it determines the knife's durability, sharpness, and ease of maintenance. High-carbon German stainless steel is generally considered the best option; it takes an extremely sharp edge, is rust resistant and can be easily maintained with a honing steel. If the knife will be used in a commercial environment stainless German steel blades with NSF certified handles are ideal. Victorinox is the most popular choice, but we also recommend F. Dick and Dexter-Russell. both of which offer excellent value.
