When choosing a fish filleting knife, look for a knife with a thin, flexible blade that allows for precise cuts and easy maneuvering around bones. The blade should be made of high-quality steel that will hold an edge well and be aware of whether the blade is composed of carbon or stainless alloys. Carbon steel blades are easy to hone and sharpen and they take a beautiful edge, but they aren't well suited for use on boats where their blades are likely to ruse due to the high humidity of the environment. Stainless steel fillet knives are better for use on the water and in high humidity environments.
