Sharpening steels, often referred to as honing rods, do not actually sharpen a blade in the sense of grinding away material to create a new edge. Instead, they realign and straighten the existing edge, which can become bent or misaligned with use. Ceramic and diamond rods are used for actual sharpening, which involves removing metal to form a new edge.
