Acuto 440 steel is proprietary to Glestain Knives, (a subdivision of Homma Science Company). Meaning that this steel alloy is exclusive to Glestain knives. It IS highly stain and rust resistant. Most German/American knife steels are constructed of a 420 family of steels that contain a maximum of .55% carbon, which is the main hardening alloy. 440 steels have a much higher carbon content (.95%) and better edge retention. Acuto 440 still maintains high quantities of chrome and vanadium, so you are not losing any of the stain resistant properties, and it is a very tough, chip-resistant steel.
