The sharpening angle of the ceramic wheels on the Kyocera Roll Sharpener are set at a 35 degree integrated angle. Meaning that it sharpens at 17.5 degrees per side. As for when to replace the sharpening wheel, it should wear very slowly. If the sharpener is not performing well, it is likely due to a build-up of powdered steel. We recommend cleaning with Barkeepers Friend and a thin brush, like an old toothbrush. This should renew the surface and alleviate any problems. If the sharpener has received a lot of heavy use, the wheels may have become too smooth and need replacement, but this would be rare. The Robert Welch Replacement wheel will fit this sharpener.
