Yes, on the Broun Coucke mandoline the cutters are permanently attached to the machine. There is a knob on the side that is used to rotate into place for a 3 mm or a 10 mm slice, or just turn it away for straight cuts. There is also a cutter built in that can be raised for waffle cuts. It's a very nice mandoline that we used in professional kitchens and the julienne blades are very easy to use. I always found the hardest part of the setup was the triangular foot that forms the base. That one always took me a minute to figure out, but the rest is easy and an extremely durable machine
