This knife is intended to slice the meat from the bone, but not to cut through it. A semi-boneless or half-ham will have a bone running right through the center. The advantage is that you get more flavor when roasting a ham with the bone in. The bone can be extracted by using an F. xxxx Ham xxxx (item # D8 2161 19). The ham xxxx is semi-circular and sharpened only at the tip. You would slide this too along the bone on all sides to free it from the meat and pull the bone out, then use the Superior carver to easily slice the ham. Alternatively, you can use just the Superior 9 inch ham carver and cut lateral lines on each side of the bone and take slices from the top of the ham, then flip it over and remove slices from the bottom.
