The choice of which honing rod or sharpening steel is dependent on the type of blade steel and intended use. In your case, the F Dick 10 inch Non-Chromium Polishin Steel is a good choice. You're using it to process meat with Victorinox knives and this is exactly what that rod is intended for. This type of polishing rod is also called a "butcher's steel" and it excels at straightening and burnishing the edge of stamped steel butcher knives. The Henckels may be a bit harder steel. There are two classes of knives of knives and we tend to call them both Henckels in the U.S.. Those marked "Zwilling J.A. Henckels" are made in Germany and the majority are good quality forged steel. Those marked Henckels International are produced in various countries and are intended to be a budget knife line. For kitchen use on forged German steel where the blade is regularly contacting a cutting board, an F. Dick regular cut rod will produce better results.
