The Masahiro MH13106 6 inch Honesuki IS for left handed users. The blade geometry is a compound bevel and not a pure single bevel knife like a yanagiba or usuba. Whereas most knives are ground as a V shape that is sharpened on both sides, the Masahiro knives are ground with one side flat to form a right triangle. Most of the sharpening is done on one side, but you still sharpen the back side to remove burrs and create a back bevel. On this blade, we suggest 80/20. 80% of the sharpening on the face at around a 15 degree angle and 20% on the back at a 22 degree angle. The steeper angle on the back side creates a strong edge. To be clear, the face side has the logo and kanji inscription.
